Thanks so much to all of the comments and entries for Gooseberry Patch's new cookbook, Best-Ever Cookies (winner of the cookbook announced below). As promised, I tallied up all of the results to determine which of my featured recipes got the most votes. Turns out that you all liked the name of this recipe as much as I did. :-)
The winner...Lemon Hissy Fits!
By the way, my husband says you are all crazy. As much as he liked all of the cookies, he thinks everyone should love the peanut butter balls as much as he did. :-)
To make the lemon hissy fits, start by combining the flour and baking powder.
In a separate bowl, beat together butter and sugar until creamy (electric mixer works best here). Add the egg, lemon juice, lemon extract, and vanilla extract and beat it until well combined.
Gradually add the flour mixture to the butter mixture; stir until combined. Then lick your spoon or your beaters...yum!
At this point, you get to fold in those beautiful white chocolate chips. The recipe says to chop them up first, but I neglected to read those instructions. I was too excited about the handful of chocolate I was holding. It happens!
You need to refrigerate your cookie dough for an hour before baking. Bake the cookies at 350 degrees for about 10 minutes. Dust them with powdered sugar while they are still warm!
If you love lemon recipes, you must also try this lemon cake...it's melt-in-your-mouth good!
Lemon Hissy Fits
from Best-Ever Cookies
1 cup butter, softened
1 1/2 cup sugar
1 egg, beaten
3 T. lemon juice
1/2 t. lemon extract
1/2 t. vanilla extract
2 1/4 cup flour
1 t. baking powder
3/4 cup white chocolate chips, chopped
Garnish: powdered sugar
With an electric mixer on medium speed, blend together butter and sugar until creamy. Beat in egg, lemon juice and extracts. In a separate bowl, combine flour and baking powder. Gradually add flour mixture to butter mixture; stir until combined. Fold in chocolate chips. Cover and refrigerate for one hour. Form dough into one-inch balls. Place on lightly greased baking sheets. Bake at 350 degrees for 10 to 12 minutes, until edges are lightly golden. Remove to a wire rack; dust with powdered sugar while still warm. Cool completely. Makes 3 to 4 dozen.
